If you want perfectly crispy bacon, you need to boil it.
Bacon contains muscle and fat. The muscle cooks more quickly than the fat. By pouring just enough water to cover the bacon in your pan, the water will prevent the temperature from getting too high so the fat can render out. Just wait until the water has evaporated, the bacon will get nice and crispy.
